Meet the team behind the Irish Qs...

Craig Connick

Commercial manager and self-confessed "gastronaught"

What is your first food memory?

Not sure it’s my first food memory but I'm a Gastronaut thanks to Keith Floyd. He was Delia for men, wasn’t he?

What is the perfect comfort food?

A bowl of pasta

Are you a starter person or a dessert person (and why)?

Depends on cuisine. Asian starters and mains can the best in the world. But European desserts are by far my favourite.

Your perfect birthday breakfast is...

Mix of European and American. A fry with pancakes!

What food is your guilty pleasure?

None at the minute, doing Keto. Ice pops for some reason when I’m not. Could put a few away in a sitting

A secret ingredient that makes everything better is...

Taste everything multiple times before serving. Not sure its a secret though? Oh and MSG is apparently not as bad as we were first lead to believe. Some Western propaganda apparently!

Who would you invite to your dream dinner party?

Noel Gallagher, Leonardo Da Vinci and Homer Simpson/Randy Marsh. They lighten the mood if Da Vinci got too science-y

What is your most used cookery book?

Watched 1’000’s of hours as opposed to read. Floyd, Ramsey, Blumenthal, Berry (as in Mary), and the countless home cooks in Come Dine with Me. I could watch foods shows and nothing else. What a sad little life Jane!

A product you've discovered through the Qs that you can't get enough of?

Galmere Foods Hummus, very tasty.

What is one food you can't stand?

Tofu. It’s the texture.

You can only take one condiment to a dessert island with you - what will you choose?

Has to be ketchup. Goes on most.

What is your signature dish?

It changes. Like serving Mexican as its a cuisine bursting with flavour and you can leave it out for people to helps themselves, so there's the communal aspect as well.

What do you listen to when you're cooking?

Podcasts. Musical tastes vary. Listening to Cafe De Anatolia at the minute. Its like chill dance with an Eastern influence. Very cool, very chill. Recommended to all.

What's your ultimate cooking hack?

To dice an onion, slice thinly orbital, half and practice. Impressive dice when you get the knack.

When choosing food products, we should think more about...

So tough this one. Food miles are important, sustainability is important too but all this costs more...

Who is an up-and-coming food producer we should look out for (and why)?

Pizza da Piero pizza bases. As good a takeaway and zero hassle when you want to personalise a pizza.

Which category are you most looking forward to this year?

Maybe condiments? Looking for some saucy inspiration for salads as I'm exploring the Keto diet. (minus 10kg since New Year, if you’re asking)
